After declaring my addiction to chipotles in adobo sauce, a friend gave me this recipe for Chipotle Yogurt Chicken. It's easy and fantastic!
8-9 chicken thighs (or boneless breast)
1 1/2 small onion
6 cloves garlic
Juice of one extra large lemon
2 cups plain fat free yogurt
4 chipotles
2 tbsp adobo sauce
1 tsp cumin
1 tbsp salt
1 tsp black pepper
2 tsp chili powder
2 tsp paprika

Throw evening but the chicken in a blender and puree.
Layer the marinade and chicken in a large sealable container starting with a layer of marinade
Next layer is the chicken, skin side down
Alternate until out of chicken leaving enough marinade to cover the last of the chicken completely
marinade for up to 24 hours
Remove chicken and smoke or grill like you would any chicken
Glaze with butter, chipotles, and honey at the end
